This is a typical 5.0 problem. It can be attributed to a single sensor, or multiple sensors. My suggestion would be to replace the IAT sensor and the coolant temp sensor, and to clean the element on the MAF sensor. Be very careful with the maf sensor element as it is very sensitive. Spray it liberally with carb cleaner and let it sit for a little bit before reinstalling. You could also try the same thing with the IAT sensor, but usually replacing it is more effective.
